where we source our ingredients

Quality Ingredients - High in Nutrition!

Every ingredient we use is carefully thought through and the highest quality bought, which is why our prices are higher than what you find at a conventional bakery or grocery store. You can be sure that we spend a lot of money on quality organic or at least non-GMO ingredients! We can't morally bake any other way! Chemicals such as glysophate (that they spray on conventional grains) and GMO foods are very dangerous to our health, so we are super careful about the ingredients we use. We are working to buy most of our flour direct from small organic farms and mills in the Idaho, Montana and Washington area. Please refer to each products label to view ingredients (an ingredient list for each product will be on our website soon) ! :-)

What kind of flours do we use?

At present we are sourcing our flours from Bluebird Grain Farms in Washington and other flours through Azure Standard. The following are the flours we are currently using for all our baked goods.


  • Artisans Baker's Craft Unbleached White Wheat Flour, certified organic. Milled from hard red winter wheat. Grain is sourced from the United State and Canada. This product is processed in Utah USA. No use of potassium bromate. Does not contain bran. Central Milling flour is milled slow and cool with the aid of water power. 


  • Azure Market Organics 100% Whole White Wheat Bread Flour (Unifine) milled from hard white wheat. 100% Whole White Wheat Bread Flour (Unifine) has protein (about 12%) and fiber levels comparable to high protein Red Wheat Bread Flour, yet produces a bread light in texture and color.


  • Barley Flour, certified organic. Milled using the unifine process (which preserves 100% of the bran and germ). Grown in USA.


  • 100% Whole Red Wheat Bread Flour, certified organic. This flour is milled using the unifine process. Grown in the USA.


  • Sonora Heritage Soft White Wheat Flour, certified organic. 100% whole grain flour and contains all the germ, bran and endosperm. Grown and milled in WA.


  • Ancient Grain Einkorn 100 % Whole Grain Flour, certified organic. This has a simple gluten structure making it a wonderful alternative for people suffering from gluten sensitivities. Grown and milled in WA.


  • Whole Grain Emmer Flour, certified organic. This ancient grain can be used as an alternative flour for some people suffering from wheat or gluten sensitivities. Grown and milled in WA.


  • Almond Meal Flour, certified organic. Grown in USA, Spain, or Italy. Processed in California.


  • Expresso (a cross between Express and Yecora Rojo), certified organic and stone milled. Resistant to diseases and rusts. Grown in the Pacific NW and milled in the Skagit Valley, WA.


  • KAMUT® brand wheat, certified organic. Unifine processed. This flour is more nutritious than regular wheat due to a higher protein and potassium content. It also contains a unique type of gluten that is said to be easier to digest than common wheat gluten. Contains 100% of the bran and germ


What kind of dairy do we use?

We are also VERY careful about where we source our dairy ingredients from. We are seeking to find small local organic farms to buy from. The following is what we are currently using:


  • Pasture-raised eggs or certified organic (like Pete and Gerry's Organic Eggs) that we get at the local health food store (paying top dollar for them)


  • Whole milks and creams, certified organic from the local health food store (Organic Valley) and we only use whole milk and cream.


  • Salted organic whole milk butter either from USA, New Zealand or Ireland or Northern California (Rumiano Family Organics)


  • Hard and soft cheeses are organic cheeses from Organic Valley, Rumiano Family Organics


What kind of food coloring do we use?

We use organic powders from Suncore Foods or Organisulmte.


  • Our yellow dye is made from organic golden berries or turmeric
  • Our indigo is made from organic blueberries
  • Our blue is made from organic butterfly peas
  • Our green is made from organic matcha powder
  • Our red is made from organic beets

What kind of oils do we use?

We are also very careful about the oils we use. We NEVER use canola or vegetable oil. Neither do we use lard, as it isn't kosher. We use:


  • Cold pressed organic avocado oil
  • Cold pressed extra virgin organic olive oil (looking for an affordable quality source)
  • Organic palm shortening
  • Organic coconut oil

What about the other ingredients we use?

Here are some other ingredients to mention


  • All the chocolate chips, cocoa powder and cacao powder is labeled organic and fairtrade
  • All the nuts we use are organic or at least non-GMO
  • Organic creamy peanut butter
  • Evaporated white cane sugar and non-GMO brown sugar (trying to source bulk organic brown sugar)
  • Organic date sugar
  • Local honey from Chase Honey in Spokane WA
  • All extracts (vanilla, coconut, orange, almond) are organic
  • Non-aluminum baking powder and non-GMO baking soda
  • Non-GMO yeast
  • Redman kosher sea salt, organic
  • Organic fruits and vegetables


What water do we use?

We use purified water in all the things we bake. We literally bought a gravity purifier so if the power goes out we will still have clean water! I won't use city water because it is full of fluoride and chlorine!

What are in our drinks?

We are very careful about the quality of drinks we serve at the bakery. Most coffee huts are just giving you a cup full of chemical laden coffee and chemical syrup. But not us! If we wouldn't drink it, we won't serve it to you!

  • Organic coffee single origin from Guatemala (Waverly's)
  • Mountain chai loose leaf tea from Israel (Shalva Teas)
  • Organic matcha from Japan (Jade)
  • Black Tea from Montana (Lake Missoula Tea Company)
  • We make all our own syrups (vanilla, hazelnut, lavender and cherry) with organic cane sugar or local honey
  • Our honey is local from Chase Honey in Spokane, WA
  • Organic hot coco mix (NOW Brand)
  • Kosher and organic marshmallows
  • Our lemonade is organic and fresh squeezed by Hadassah
  • All our fruits in pies are either from our own harvest or frozen from organic farms
